Easy Instant Pot Steel-Cut Oats

- 1 c Organic Steel-Cut Oats
- 1 c Soy milk You can use any non-dairy milk
- 1.5 c Water
- 1 tsp Ceylon Cinnamon
- 1/8 tsp Sea Salt
Add the steel-cut oats, soy milk, water, sea salt and cinnamon into the Instant Pot and stir well.
Pressure cook on high for 5 minutes.
After the timer goes off, allow the steam to naturally release for about 10 minutes. Release any remaining steam, remove the lid and give the oats a good stir. Let stand for 5 minutes or so to thicken then serve immediately with your favorite toppings. You can store leftovers in the refrigerator for 5 days. Reheat on the stovetop with a splash of soy milk or microwave for 1 minute. Enjoy!
- Use 1 cup full-fat coconut milk for a creamier texture
- If using dried fruit like apricots, raisins, currents, etc. I like mixing the dried fruit in with the oats before cooking so that they get soft as they cook with the oats
- You can also freeze leftovers in an airtight container for about 1 month
