There’s nothing as simple and delicious as a creamy hot bowl of Instant Pot steel-cut oats topped with your favorite fruits, nuts or seeds, then drizzled with a bit of maple syrup, or a creamy nut-butter. I often crave this filling breakfast especially on cold and rainy winter mornings like we’ve been having so much of in California. โ๏ธ
Before I had an Instant Pot, I used to either soak my steel-cut oats overnight to cut down on the cooking time, or have to slave over the stove for 20 minutes to get just the right creamy consistency, but now with my Instant Pot, I can make this yummy breakfast in less than 10 minutes! ๐๐ผ
This recipe is especially helpful as you can make a big batch during the weekend then save the rest in the fridge for easy weekday breakfasts. Just reheat, add some toppings and voilร ! A heart-healthy, fiber fueled, minimally processed breakfast in a snap! You can even take your oatmeal to work with these handy meal-prep glass containers that are conveniently sectioned so that you can put your oatmeal in one section, fruits in another, and the nuts or seeds etc. in the other section to keep everything separated and mush-free until you’re ready to eat it!
How to make your steel-cut oats extra creamy
The secret to these creamy steel-cut oats is to use a mixture of 1.5 cups water and 1 cup of soy or other non-dairy milk when making this recipe. For a more decadent oatmeal, you can also use a full-fat coconut milk from a can. You can also add a tablespoon of chia seeds, hemp seeds or ground flax seeds for even more fiber, nutrition, protein, and thickness. Do you prefer sweeter oats? If so, you can add some monk-fruit sweetener, stevia, date sugar, or maple syrup before cooking and don’t forget a pinch of sea salt of pink Himalayan salt!

I also always add 1/2 tsp or more of Ceylon cinnamon because of the lovely flavor as well as the many health benefits! Did you know that Ceylon cinnamon can help lower blood sugar levels (a plus for diabetics), is full of anti-oxidants including polyphenols has anti-inflammatory properties and can protect you from heart disease by reducing triglycerides and total cholesterol levels? I think all of these benefits are a great reason to add cinnamon to as many of your foods as you can!

Easy Instant Pot Steel-Cut Oats
Equipment
- 1 Instant Pot
Ingredients

- 1 c Soy milk You can use any non-dairy milk
- 1.5 c Water
- 1 tsp Ceylon Cinnamon
- 1/8 tsp Sea Salt
Instructions
- Add the steel-cut oats, soy milk, water, sea salt and cinnamon into the Instant Pot and stir well.
- Pressure cook on high for 5 minutes.
- After the timer goes off, allow the steam to naturally release for about 10 minutes. Release any remaining steam, remove the lid and give the oats a good stir. Let stand for 5 minutes or so to thicken then serve immediately with your favorite toppings. You can store leftovers in the refrigerator for 5 days. Reheat on the stovetop with a splash of soy milk or microwave for 1 minute. Enjoy!
Notes
- Use 1 cup full-fat coconut milk for a creamier texture
- If using dried fruit like apricots, raisins, currents, etc. I like mixing the dried fruit in with the oats before cooking so that they get soft as they cook with the oats
- You can also freeze leftovers in an airtight container for about 1 month
