Hey everyone! 🌞 Today, I’m whipping up a delicious vegan Caprese salad using my homegrown “King Beauty” tomatoes. These beauties are yellow with stunning stripes, and they’re packed with flavor! 🍅💛

Let’s Make the Salad!

🍅 Slice those gorgeous King Beauty tomatoes.
🌿 Layer with fresh Italian or black basil.
🧅 Add thin slices of red onion for that extra zing. I used a madoline to get the thinnest slices!
🫒 Drizzle extra virgin olive oil and balsamic vinegar.
🌱 Sprinkle hemp seeds for a boost of plant protein and a delightful crunch.
🧂 Finish with a touch of sea salt (I love Maldon) and freshly ground pepper.
Voilà! A quick, easy, and super healthy vegan Caprese salad that’s bursting with flavor. Perfect for summer, and even better because it’s homemade! 💚🍽️

Loaded with antioxidants from blueberries, fiber, omega-3 fatty acids, and anti-inflammatory phytochemicals called lignans, this yummy breakfast is a true superhero for you and your family’s health! Plus, it provides prebiotics to nourish your gut bacteria, giving your microbiome some much-needed love. 💚

📝 Ingredients:
- 2 cups Rolled Oats
- 2 cups Soy Milk
- 2 very ripe bananas (mashed)
- 1 tsp baking powder
- 1 tsp fine sea salt
- 1 flax egg (1 tbsp ground flax seed + 3 tbsp warm water)
- 1 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
- 3/4 cup pecan halves for the top

1️⃣ Pick a good watermelon: Select a heavy watermelon 🍉with a creamy yellow sun spot and a hollow sound when you knock on it.
